Open-Face Pulled-Pork Sandwiches With Tangy Broccoli Slaw

Ingredients: 1 sliced red onion, 8 Tbsp cider vinegar, salt and black pepper, 1/4 cup sour cream, 1/4 cup mayonnaise, 4 cups package broccoli slaw, 1 chopped yellow onion, 1/4 cup tomato paste, 1/4 cup packed light brown sugar, 1 Tbsp Worcestershire sauce, 1 Tbsp Dijon mustard, 1 Tbsp Cajun seasoning, 1 1/2 pounds pork shoulder trimmed and cut into 2 pieces, and 4 thick slices toasted sandwich bread. Method: Combine red onion, 4 Tbsp cider vinegar, and 1/4 tsp each of salt and pepper in a bowl. Cover and refrigerate for 4 hours. In another bowl, mix the sour cream, mayonnaise, 2 Tbsp cider vinegar, and ¼ tsp each of salt and pepper. Add the broccoli slaw and refrigerate for up to 12 hours. In the slow cooker, combine the pork with the yellow onion, tomato paste, sugar, Worcestershire sauce, mustard, Cajun seasoning, 2 Tbsp cider vinegar, ½ teaspoon salt, and ¼ teaspoon pepper. Cover and cook on low for 8 hours or 5 hours on high. Shred the pork using two forks and mix in the cooking liquid. Serve with the slaw on top of toast.

Apricot Chicken

What to buy: 2 Tbsp canola oil, 4 boneless skinless chicken breasts, 1 tsp dried Italian seasoning, 1 to 1/3 cups reduced-sodium chicken broth, 1/2 c apricot preserves, and 1 Tbsp cornstarch. What to do: Combine the chicken breasts with dried Italian seasoning. In a large pan on medium to high heat, fry the chicken for 15 minutes, turning once. In another bowl, combine what is left of the ingredients and mix well. Add this sauce to the chicken in the pan and cook for an additional 3 minutes or until the sauce thickens up a bit and done. Serve the apricot chicken with rice. Here is a tip: in case there is no dried Italian seasoning available, you can make your own by combining ½ tsp dried oregano, ¼ tsp dried basil, and ¼ tsp dried thyme. Use this same mix to coat the chicken before cooking.

Easy beef steak

What to buy: 1 beef steak, 2 cloves garlic paste, 1 inch finely cut ginger, 2 tsp black pepper, 1 Tbsp salt, 2 Tbsp Worcestershire sauce, 2 Tbsp soy sauce, 5 Tbsp beef stock, 2 tsp tomato ketchup, 1 tsp chilli sauce, and 1 tsp lemon juice. How to cook it: Rub the steak with all the ingredients except the stock, tomato ketchup, chilli sauce, and lemon juice. Marinate in the refrigerator for about 2 hours. Let the flavours sink and soak into the meat. When ready, grill the steak on a cast iron grill with some oil for about 10 minutes or until the steak is golden brown on both sides. Do not flip the steak frequently to get beautiful grill marks. After, take what is left of the marinade, pour it into a pan, and add to it the stock, tomato ketchup, chilli sauce and lemon juice. Cook this in low heat for a few minutes and serve with the steak.
