What to buy: 2 Tbsp canola oil, 4 boneless skinless chicken breasts, 1 tsp dried Italian seasoning, 1 to 1/3 cups reduced-sodium chicken broth, 1/2 c apricot preserves, and 1 Tbsp cornstarch.

What to do: Combine the chicken breasts with dried Italian seasoning. In a large pan on medium to high heat, fry the chicken for 15 minutes, turning once. In another bowl, combine what is left of the ingredients and mix well. Add this sauce to the chicken in the pan and cook for an additional 3 minutes or until the sauce thickens up a bit and done. Serve the apricot chicken with rice. Here is a tip: in case there is no dried Italian seasoning available, you can make your own by combining ½ tsp dried oregano, ¼ tsp dried basil, and ¼ tsp dried thyme. Use this same mix to coat the chicken before cooking.

What to buy: 8 oz rigatoni pasta, non-stick cooking spray, 1 and 1/4 lbs boneless skinless chicken breasts cut into 1-inch pieces, 1/2 c chopped onion, 1 14.5 oz diced tomatoes with juice, 1 10 oz. can condensed cream of mushroom soup, 1 c frozen green peas, and 6 Tbsp shredded Parmesan cheese.

What to do: Cook the pasta according to package instructions. In a separate pan coated with non-stick cooking spray, cook the chicken with the onion over medium to high heat. Pour the diced tomatoes together with the juice in the can, followed by the soup. Add the peas next and stir to combine. Finish by adding the cooked pasta into the pan then toss to coat. Serve with a sprinkling of shredded Parmesan cheese on top.

What to buy: 2 Tbsp butter, 1 lb boneless skinless chicken breasts cut into small pieces, 1 c chopped onion, 1 tsp ground cumin, 1 10 and ¾ oz. can reduced sodium condensed cream of chicken soup, 1 10 oz. can diced tomatoes and green chilies with juice, 1 c frozen whole kernel corn, and 1/2 cup water.

What to do: Melt the butter in a pan on medium to high heat. Cook the chicken with the onion. Add the cumin and stir continuously for a minute. Pour in the rest of the ingredients and turn the heat on high. Cover the pan and bring to a boil then let simmer for an additional 10 minutes.

 

Chicken recipes #4: Chicken and Black Bean Chili

What to buy: non-stick cooking spray, 1 lb. boneless skinless chicken breasts cut into 1/2-inch pieces, 3/4 c chopped onion, 2 8 oz. cans tomato sauce, 1 15 oz. can whole black beans rinsed and drained, 1 15 oz. can pork and beans, and 2 Tbsp low sodium taco seasoning mix.

What to do: Spray a pan with the non-stick cooking spray and cook the chicken with the onion over medium to high heat. Add the rest of the ingredients and cook for 10 minutes until hot and bubbly.

 

Chicken recipes #5: Italian Chicken Packets

What to buy: 4 c frozen broccoli cuts, 1 14.5 oz. can drained diced tomatoes, ½ c light Italian dressing, and 4 boneless skinless chicken breasts.

What to do: Mix broccoli, drained tomatoes, and dressing in a bowl. Create the packets. For each packet, fold 2 20 x 12 in. sheets of foil on top of each other. Put one chicken breast on each packet, followed by a spoonful of the broccoli and tomato mix. Bring up the short sides of each packet and double fold on top. Double fold both ends to seal each packet, leaving space for steam to gather. Place the packets on a baking tray and bake on a preheated oven for 25 minutes.
