Crock pot recipes #1: Open-Face Pulled-Pork Sandwiches With Tangy Broccoli Slaw

Ingredients: 1 sliced red onion, 8 Tbsp cider vinegar, salt and black pepper, 1/4 cup sour cream, 1/4 cup mayonnaise, 4 cups package broccoli slaw, 1 chopped yellow onion, 1/4 cup tomato paste, 1/4 cup packed light brown sugar, 1 Tbsp Worcestershire sauce, 1 Tbsp Dijon mustard, 1 Tbsp Cajun seasoning, 1 1/2 pounds pork shoulder trimmed and cut into 2 pieces, and 4 thick slices toasted sandwich bread.

Method: Combine red onion, 4 Tbsp cider vinegar, and 1/4 tsp each of salt and pepper in a bowl. Cover and refrigerate for 4 hours. In another bowl, mix the sour cream, mayonnaise, 2 Tbsp cider vinegar, and ¼ tsp each of salt and pepper. Add the broccoli slaw and refrigerate for up to 12 hours. In the slow cooker, combine the pork with the yellow onion, tomato paste, sugar, Worcestershire sauce, mustard, Cajun seasoning, 2 Tbsp cider vinegar, ½ teaspoon salt, and ¼ teaspoon pepper. Cover and cook on low for 8 hours or 5 hours on high. Shred the pork using two forks and mix in the cooking liquid. Serve with the slaw on top of toast.

Ingredients: 1 lb ground beef chuck, 1 28-ounce can whole peeled tomatoes, 2 finely chopped carrots, 1 chopped onion, 1 chopped celery stalk, 2 cloves chopped garlic, 1/4 cup tomato paste, 1/4 cup dry white or red wine, 1 tsp dried oregano, 1 tsp dried thyme, 1 bay leaf, salt and black pepper, 3/4 pound spaghetti, and grated parmesan.

Method: Mix beef, tomatoes and juice, carrots, celery, onion, garlic, tomato paste, wine, oregano, thyme, bay leaf, 1 tsp salt, and ¼ teaspoon pepper in the slow cooker. Cover and cook on low for 8 hours or 5 hours on high. Before serving, cook spaghetti following package directions and mix in the pot. Toss and sprinkle with parmesan.

Ingredients: 1 1/2 lbs lamb shoulder trimmed and cut into 1-inch pieces, 4 chopped carrots, 1 chopped onion, 1/2 cup halved dried apricots, 1/2 cup pitted green olives, 2 cloves chopped garlic, 2 Tbsp all-purpose flour, 1 tsp paprika, 1 tsp ground cumin, 1/2 tsp ground cinnamon, 1/2 tsp ground ginger, salt and black pepper, 1 cup couscous, and chopped pistachios, fresh cilantro leaves, and lemon wedges, for serving.

Method: Combine lamb, carrots, onion, apricots, olives, garlic, flour, paprika, cumin, cinnamon, ginger, 1 tsp salt, ¼ tsp pepper, and ½ cup water in the slow cooker. Cover and cook on low for 8 hours or 5 hours on high. Before serving, cook couscous following package directions. Serve the lamb on top of the couscous with with the pistachios, cilantro, and lemon wedges.

Ingredients: 1 1/2 pounds red new potatoes, 2 cups drained sauerkraut, 1 thinly sliced onion, 1/2 cup low-sodium chicken broth, 1/4 cup dry white wine, 1 tsp caraway seeds, salt and black pepper, 1 1/2 lbs bratwurst links, 1/4 cup chopped fresh flat-leaf parsley, toasted dark bread, and whole-grain mustard, for serving.

Method: Combine bratwurst, potatoes, sauerkraut, onion, broth, wine, caraway seeds, ½ teaspoon salt, and ¼ teaspoon pepper in the slow cooker. Cover and cook on low for 8 hours or 5 hours on high. Sprinkle with parsley to serve on top of toast with butter and mustard.

Ingredients: 1/2 cup packed light brown sugar, 3 Tbsp low-sodium soy sauce, 3 Tbsp lemon juice, 2 Tbsp fish sauce, 1 Tbsp grated ginger, 1/4 teaspoon crushed red pepper, 1 1/2 lbs pounds boneless, skinless chicken thighs, 1 cup long-grain white rice, 1 Tbsp canola oil, 3/4 lb trimmed snow peas, 2 heads baby bok choy leaves separated, 1 sliced red bell pepper, 4 sliced scallions, 2 cloves thinly sliced garlic, and black pepper.

Method: Combine chicken with sugar, soy sauce, lemon juice, fish sauce, ginger, and crushed red pepper. Cover and cook on low for 8 hours or 5 hours on high. Before serving, cook rice following package instructions. Place chicken on a plate and pour the cooking liquid on a skillet. Boil for 5 minutes to thicken. Sautee snow peas, bok choy, bell pepper, scallions, and garlic in another skillet until tender and season with ¼ tsp pepper.
