Dessert recipes #1: Marbled chocolate pots

Ingredients: 400 g double cream, 100 g icing sugar, 100 g plain chocolate broken into little pieces, raspberries, and chocolate shapes.

Instructions: These are both sexy and delicious. Begin by combining the cream and icing sugar. Whisk until soft peaks form. In a microwave-safe bowl, melt the chocolate pieces and fold into the cream mixture to create a marbled effect. Take some chilled dessert glasses and spoon the cream. Leave it to chill in the refrigerator for up to 4 hours. Before serving, add some raspberries and chocolate shapes. To make the chocolate shapes, simply drizzle some more melted chocolate into a tin foil and leave for a few to harden.

 

Dessert recipes #2: Blackberry crumble

Ingredients: 550 g blackberries, 2 oranges one segmented and one for zest and juice only, 100 g butter, 65 g caster sugar,

and 100 g plain flour.

Instructions: In a bowl, combine the berries, orange, zest, and juice. In a separate bowl, mix all the other ingredients using your fingers until they look like fine breadcrumbs. Transfer the fruit mixture into a gratin dish and cover with the crumble mixture. Bake in a preheated 220 C preheated oven for 15 minutes until golden on top. If desired, serve warm with some ice cream or custard on top.

 

Dessert recipes #3: Caramel custards

Ingredients: 200 g granulated sugar, 60 ml water, 3 large eggs, 50 g vanilla sugar, and 500 ml whole milk.

Instructions: Prepare 8 individual molds in an oven dish. Start with the caramel. Combine water and sugar in a heavy pan and heat slowly until the sugar melts. Gradually increase the heat and continue cooking until the syrup turns a golden brown color. Divide the caramel into the molds. In a separate bowl, mix eggs, vanilla sugar, and milk. Whisk together and strain into a jug then pour equally into the molds. Pour boiling water into the oven dish until it comes halfway up the molds and place it in a 120 C preheated oven. Bake for an hour or until the custard is just form. Let the custard cool a bit then run a knife around the edges of the custard. Cover it with a plate then transfer by turning it upside down.

 

Dessert recipes #4: Plum and almond galette

Ingredients: 6 to 8 pitted and sliced plums, 100 g cut mixed citrus peel, zest of 1 lemon, 30 g flour, 125 g caster sugar, 100 g ground almonds, 450 g sweet shortcrust pastry, icing sugar, and whipped cream.

Instructions: Toss the plum slices with the citrus peel, lemon zest, flour, caster sugar and ground almonds in a bowl and set aside. Prepare the pastry. Divide it into 4 on cleaned and floured work surface. Roll out each piece to form a 6 in square that is ½ in thick. Place the pastry squares into 2 large non-stick baking sheets lined with parchement. Place the plum mixture on the center of each, making sure to leave a 2 in. border on all sides. Fold the edges of pastry up to hug the mixture but have most of the filling visible. Put the galettes in a 180 C preheated oven and bake for 25 minutes or until the pastry is light brown in color and the filling is bubbling on top. Let cool on a rack before serving and top with icing sugar and whipped cream. Enjoy these dessert recipes!
